Recipe | Embellished Boxed Mac and Cheese: Recipe 1

I love mac and cheese, but the boxed kind isn't very exciting or containing of any nutritional value, really. So I decided to take my favorite brand of boxed mac and cheese and embellish it a little bit. Not only does this stretch the box to more servings, but makes it more interesting with more ingredients and more nutritious and substantial.


1 box of your favorite mac and cheese. I use Annie's deluxe mac and cheese
2 soy sausage links, cut into half-moon shapes
1/2 cup vegetable stock
1 tbsp extra virgin olive oil
1 onion, chopped
1 bell pepper, chopped
1 tomato, chopped
1 avocado, mashed
1 tbsp cumin
1 tbsp smoked paprika
1 tsp crushed red pepper flakes
Salt and pepper to taste



Set a large skillet to medium heat and set on high a large pot of water for the pasta. Start by browning off the sausage pieces in the olive oil. This should take around 5-7 minutes.


Remove the pieces from the pan after they've browned and set aside. Add the chopped peppers and onions to the pan and begin to sweat them. Again, this should take around 5-7 minutes. Add some salt and pepper.


(I forgot to photograph the rest of the recipe, but I think it's all pretty easy to follow)

At this point, the water for your pasta should be boiling. You can go ahead and salt the water and drop the pasta in. Meanwhile, in the skillet, add the vegetable stock, mashed avocado, and the cheese sauce that comes in your mac and cheese box. If your mac and cheese comes with a powder, just add some milk along with the other ingredients. Stir everything together until the avocado and cheese sauce has incorporated into a creamy mixture.

Add the cumin, smoked paprika, and red pepper flakes to the sauce. Stir to disperse the spices throughout the whole sauce. Add more salt and pepper if necessary Let this simmer until the pasta is done cooking (8-10 minutes). Drain and Add the pasta to the sauce along with the chopped tomatoes. Combine everything and enjoy!

Recipe | Fruit Salad

I just wanted something fresh to have on hand for breakfast or random snacking throughout the day, so I threw this together in about 10 minutes and now have a huge batch ready for me whenever I want it. Again, this is so painfully easy I feel silly writing it out.


2 mangoes, diced
3 kiwis, chopped
a handful of blueberries
a handful of blackberries
the juice of 1 lemon
the juice of 1 orange

Combine and enjoy

Recipe | Bruschetta

16 oz. container of grape tomatoes, halved
1/2 onion, minced
a couple tbsp fresh basil, cut into ribbons
2 tbsp Extra Virgin Olive Oil
1 tsp crushed red pepper flakes
Salt and pepper to taste

This seems almost to easy too even make a post about, but combine all of the ingredients in a bowl, toss, and enjoy. Serve on toasted baguette, over pasta, in your salad, anything you can think of. I even add diced fresh mozzarella to the recipe sometimes.

Recipe | Stuffed French Toast

Chris came to visit for my birthday last weekend, so we decided to make a breakfast that was different than the typical eggs and veggies or oatmeal or granola that we normally have. I bought this "cookie butter" from Trader Joe's and I had been wanting to put it in between two pieces of french toast to make a sort of stuffed french toast. Well, needless to say, but it came out AWESOME, and it took maybe a total of 15 minutes including cook time to assemble two of these beauties for us to devour for breakfast.


For two servings you'll need:

4 slices of your favorite bread
4 tbsp cookie butter
2 eggs, beaten
2 tbsp ground cinnamon
A non-stick cooking spray

Set a large skillet to medium heat and spray with cooking spray. Whisk your eggs and cinnamon together and pour onto a dish that will allow you to dunk your french toast (like a plate with higher edges so the egg doesn't pour over, or a large shallow bowl). Assemble your cookie butter sandwiches with 2 tbsp of the cookie butter in each. Dunk both sides of the sandwiches in the egg and cinnamon mixture. If your pan is big enough,  you could fit both sandwiches in the pan at the same time. Cook them for about 4-5 minutes on both sides, or until the egg is cooked and the bread is golden brown. Serve with maple syrup and a handful of fresh berries on the side and you're set for a delicious breakfast.

Also, this is really more of a technique than a recipe, so if you can't find cookie butter - nutella, peanut butter, or anything else you can imagine, would taste delicious in this recipe.

Recipe | The Dark Passenger

My roommate and I have been thinking up awesome drink concoctions since the beginning of last summer... mostly related to either Dexter or It's Always Sunny in Philadelphia. So, since yesterday was my 21st birthday, we figured what better day to actually execute one of these awesome drinks we've had in mind?

This one's called The Dark Passenger, and for all you Dexter fans - you'll know exactly what this refers to. You only need three things to make this awesome drink.



1.5 shots of Mango Vodka
3/4 can of Redbull
a few tbsp of Grenadine

You want this drink to have a layering effect, so start off with the vodka, then add the red bull, and then slowly pour the grenadine in last to give it a murky, bloody, look to it.

Update | Sorry!

I know it's been a while since I've posted anything. I've just been swamped with school work lately. But I'm finally on spring break, and although it's not much of a break for me, I DO have some free time to post some new recipes I've tried out. They'll be posted over the span of this week and hopefully I'll come up with a few more before my break ends.

I'm also working on some pieces to set up an online art shop. I'll  post them here when they're finished and I'll link the shop once that's up and running. I'm really proud of the artwork that I produce and it's something I'm extremely passionate about. I hope at least some people find my artwork equally as enticing.

I think I'm going to incorporate some make-up and beauty-related posts to this blog because that's another thing I'm very passionate about, so check back for those kinds of updates, too!
